Olive oil is well known as one the healthy cooking oil. Also utilized in various industry around the world, including Indonesia. As recently people are more concerning on health ingredient in their daily consumption, thus the increasing of Olive Oil market is following these issues as well.

Olive Oil manufacturing process generally through below process:
Harvesting:
Extreme used the most advanced & beneficial technology in gathering the olives from its own groves.
The crop is hand-picked according to the traditional method & the quality olives used to produce our oil are selected right in the grove
Transportation:
As our olive groves are distributed through 3 Andalusian provinces; olives are transported daily to the Bizarron.
Washing & Weighting:
At the processing plant, top soil & natural materials such as leaves are removed after which the fruit is weighted
Grinding the olives:
The olives pass through stone or hammer mills, crushing the fruit & forming a homogenous paste.
Mixing:
Once ground, the paste is gently mixed in order to increase the size of the oil drops & allow water to slowly separate
Pressing:
The resulting paste is pressed to extract the oil & water
Decantation:
This step ensures the final separation of water from the oil whether by means of a natural decantation or centrifugal decanters.
Storage:
Once the production steps are completed, the oil is stored in stainless steel cans, to prevent contact with the outside.
Each process could result the quality of the olive oil, further also based on several factors such as including: suitable soil, plenty of sunshine, plenty of fresh air and appropriate direction of area. Olive plant and crop usually are "koutsourelia or Lianoelia" olives. 


The Characteristics of Olive Oil that could be sensed are as below :

Each type of oil has what’s called a “smoke point.” The smoke point is the specific temperature at which the oil starts to break down, or in more technical terms, the point at which its molecular structure begins to change. These molecular changes result in changes in flavor, as well as changes in nutritional value; specifically, the nutritional value of the oil starts to degrade, changing what once may have been considered an especially healthy oil (such as olive or flaxseed) into one that is unhealthy. For cooking oil, there are several tips that may applied in order to keep the Olive Oil compared to other vegetable oil 

Heat During Cooking: No heat
Oil: Flaxseed
Best Use: Salads

Heat During Cooking: Low to moderate
Oil: Coconut, corn, olive, peanut, sesame, walnut
Best Use: Baking (low heat), light sautéing, pressure cooking, salads 

Heat During Cooking: Medium heat
Oil: Macadamia nut, safflower, canola
Best Use: Baking (medium heat), sautéing, stir-fry 

Heat During Cooking: High Heat
Oil: Avocado, sunflower, soybean/soy
Best Use: Deep browning, deep-frying, searing

Note that the above represents oils that are refined. Most of the oils we buy in stores are refined. These oils tend to have much higher smoke points than their unrefined counterparts. They also differ in nutrition and flavor. Unrefined oils are more nutritious (some of an oil’s nutrients are removed during the refining process), and they tend to be much richer in flavor. For instance, unrefined peanut oil will smell and taste just like peanuts, while refined peanut oil will have a lighter smell and taste.

When it comes to extremely high-heat cooking, always choose oils that are refined. If, however, you are anxious to have a salad with a rich taste, splurge on the unrefined variety.

Besides cooking oil, there are several use of Olive oil in Non Food Usage, which could substitute of chemicals, compounds and substances that aren't very environmentally friendly and no need to use the high grade Olive Oil
-        After polishing copper or brass, rub it with a little olive oil to slow down the reocurrence of tarnish
-        Can be used as a stainless steel cleaner; apply sparingly
-        Rub olive oil into wooden cutting boards to help prevent cracking, repel staining and marking
-        Remove paint from hair or skin by dabbing a cotton ball dipped in olive to the affected area
-        Use it as an alternative for de-squeaking hinges
-        Olive oil can help unjam zippers - use a cotton bud to apply
-        Apply a little olive oil to your shoes to restore their shine
-        Old leather can be made more supple by rubbing in olive oil (spot test first)
-        Coat garden tool blades with a thin layer of olive oil to prevent dirt sticking to them and to help   prevent rusting. This works really well!
-        Mix one part lemon juice with 3 parts olive oil to make a wooden furniture polish
-        Rub into to fingernails before and after manicuring
-        A small amount of olive oil applied after shampooing can substitute hair conditioner.
-        Extra light olive oil can be used as a massage oil
-        Olive oil can replace shaving cream or shaving oil
-        Dip a razor into olive oil after use to prevent the blade rusting
-        Can be applied to chapped lips to to relieve the dryness
-        Use as a makeup remover
